Characterful, food-friendly acidity along with tight, bracing tannins suggest a drinking window extending through 2025. (Gambero Rosso Italian Wines, 2021) Description: The evolution of this wine in a wooden cask gives it a ruby colour that turns to garnet with aging. The 100% Aglianico vines are located on medium-volcanic soil at about 500m a.s.l. in the towns of Ripacandida and Maschito. Vinification: 100% Aglianico. Following the completion of the harvest between the 15th and 30th of October, the grapes are subjected to alcoholic fermentation in cement fermenters for about 10 days. Following the completion of the racking and after a period of maturation, the wine is moved into barrels where it remains for at least 18 months. Flavours: As a result of the aging process, the intense ruby-red colour turns to garnet. The vine typically produces bouquets of berries which are dry and full, in which the animated flavour of young tannins produces an exceptional blend over the years. Food Pairings: Food Pairing with Aglianico: Rich and robust meat dishes such as beef stews. Braised dishes such as Oxtail, Osso Bucco or Lamb Shanks. Spicy sausages and other barbecued meats.
